Figure out significa entender, deducir o descifrar algo que no estaba claro.

La diferencia con figure out es muy clara:

Entendí / averigüé cuál era el problema.

No conseguía entender lo que estaba diciendo.

Iron out significa limar, pulir o resolver pequeños problemas, detalles o diferencias antes de que algo quede definitivamente cerrado.

La imagen es muy visual: como cuando planchas una camisa y quitas las arrugas.

No suele referirse a resolver un gran problema desde cero, sino a eliminar los últimos obstáculos, flecos o imperfecciones.

Tenemos que pulir algunos flecos técnicos antes de lanzar el curso.

They’re trying to iron out their differences.
